Hello darlings. Sorry I’ve been so quiet – there’s a lot going on in my personal life at the moment and I’m not finding time to cook, let alone to blog. I have lots of lovely photos and videos from honeymoon, so I’ll try and get those edited and uploaded for you soon.
But before that – pancakes!
It’s pancake day today. I think most people in the UK nowadays make two types of pancakes – big fluffy buttermilk pancakes or thinner, traditional British pancakes. I’ve got a recipe and video tutorial for the former…

- 2 whole eggs
- 400ml milk
- 1 teaspoon of vanilla essence
- 2 of cups self raising flour
- 1/3 cup caster sugar
- Add milk, eggs and vanilla to a jug and whisk to add a little air. Sift flour and sugar into a large mixing bowl. Add milk mixture to a well in the centre and whisk until all ingredients are combined and no lumps are visible.
- Add a little butter or walnut oil to a large frying pan and put onto a medium heat. Take 1/4 of a cup of mixture and pour into the centre of the pan. Cook gently until bubbles appear on the mixture's surface. Turn or flip and cook the other side for a similar time. Add a little more butter or oil and repeat until the mixture is used up.
