I know that most of my savoury recipes may as well be subtitled “Let’s see how many vegetables we can fit on one plate!” but this…this is a little different. There’s potato, onion, sausage, baked beans, egg and cheese, all mixed together in one glorious pie. It is amazing.
When we took it out of the oven it was so hot it was burning our mouths, but we kept trying to eat it anyway because it looked and smelt delicious. I based this on a recipe from the ASDA magazine, believe it or not. It was designed for kids but I’ve made it a bit more grown up.
This is another one that’s pure comfort food — when you’re ever sad or you need to warm up after a cold day, reach for this. The way I made it serves two, and you need individual pie dishes.
- One onion
- 500g potatoes
- 6 “light” sausages/Quorn sausages
- Can of baked beans
- 4 eggs
- 84g low-fat cheese
Pre-heat the oven to 200C. Peel the potatoes and put them on to boil. Whilst they’re boiling, slice the onion and fry it with some garlic until soft and just starting to go brown.
When the potatoes are very soft, mash them until they’re as creamy as possible. Add some fromage frais if you need them creamier. Then mix in the onions and line two individual pie dishes with the potato.
Then stick three sausages in the mix, standing up like this.
Divide the beans between the dishes…
And crack two eggs above the beans, one on each side of the sausages.
Grind black pepper over the top of the eggs, and then sprinkle over the cheese.
Put the dishes on a baking tray and cook in the pre-heated oven for 35 minutes. When they come out, leave them to cool for 10 minutes (This bit is important — your mouth will thank you for it!) and then…devour.
The pie inside just looks…amazing
It’s so, so good. The sausages are very soft and moist because of cooking in the beans, the eggs are almost scrambled, the cheese is crispy, the potato is soft and the onion and garlic just adds a gorgeous kick…
